Evening in the Country by Bela Bartok is a classic piano solo, arranged for 'mallet instrument' with piano accompaniment by Scott R. Meister. This piece has a pentatonic, somewhat Asian influence that could easily work on xylophone or marimba.
You can use this piece to expose young students to Bartok without turning them off - it's quite palatable to Western ears compared to many of the composer's other works.
